Guess what you can do with blueberries? ICE CREAM!!
This blueberry ice cream is simply IRRESISTIBLE! You need to try it to believe it!
Blueberry Mixture:
1/2 cup sugar
1 tbsp. corn starch
1/2 cup water
1 3/4 cups blueberries
1 tbsp. lemon juice
In a pot, combine sugar and corn starch. Stir in water and mix until smooth. Stir in blueberries and lemon juice and bring to a boil. Reduce heat and simmer for 5 minutes, uncovered, until mixture is slightly thickened. Cover and refrigerate.
Ice Cream:
32 oz. whip topping
1/2 cup sugar
1/2 box instant vanilla pudding
16 oz coffee whetener
1 tsp. vanilla extract
Beat whip topping on high speed until stiff. Lower speed and gently add rest of ingredients.
Cookie Crumbs:
1 box cinnamon graham crackers
(crushed)
2 tbsp. sugar
1 stick margarine (melted)
Preheat oven to 350 degrees. Combine crushed crackers and sugar and mix well. Add margarine.
Spread mixture onto a lined cookie sheet. Bake fo 10-15 minutes until lightly brown. Cool and break into crumbs. Divide in half.
To assemble:
Press half of crumbs into a 9x13 baking pan. Spread half of ice cream onto crumbs. Drop half of blueberry mixture by teaspoonfuls over ice cream. Continue layering remaining crumbs, ice cream and blueberry in the same fashion.
