An old remedy for weather changes and colds-Chicken Soup!
It's Hearty and Healthy! It's a must!
2 lbs. Chicken bones
1 lb. chicken wings
4 carrots
2 parsnips
2 stalks celery
1 medium knob celery
2 tsp. salt
1 sweet potato
1/2 tsp. white pepper
3 cloves garlic crushed
2 tsp. corn starch dissolved in 1/2 cup water
Place vegetables in a net bag.
In an 8 quart pot. combine all ingredients, except the corn starch. Fill pot with water 3/4 full.
Cook for 2 hours.
Add dissolved corn starch and boil for 2-3 minutes.
Remove chicken wings, bones and vegetables from soup. Blend vegetables and pour back into soup.
Remove chicken pieces from bones and wings and add to soup.
Serving suggestion: You can add corn, fresh parsley and noodles.
